Wrap each game hen with 2 slices of thin bacon as shown and stuff each with sage, a garlic clove, or a lemon half. Then skewer and cook the birds on a rotisserie for about 45 minutes, or over indirect heat for closer to 1 hour. They're ready when the legs are wobbly (not springy) in their sockets.
lollipop chicken
Push the skin and flesh of each drumstick up to the tip, so the bone becomes a natural handle. Let sit overnight in the holy trinity of marinades: a little honey, a little more lime juice, and a lot of soy sauce. Grill, with the drumstick sticking straight up, for about 20 minutes.
artichokes
For maximum oohs and aahs, grab the biggest you can find (shown: jumbo globe artichokes). Split them in half and steam on the stovetop for 10 to 15 minutes. Brush with olive oil, sprinkle with kosher salt and pepper, and transfer to the grill for 20 minutes more. (Smaller artichokes require only 10 to 15 minutes.)
