  • 1/2 cup brown sugar
  • 1/4 cup dried cherries
  • 1/4 cup chopped pecans, toasted
  • 6 baking apples, cored but not peeled
  • 5 tablespoons maple syrup
  • 1/4 cup butter
  • 1/2 cup apple cider

  1. In a small bowl, toss the brown sugar with the dried cherries and pecans.
  2. Place apples in a roasting pan. Put a small amount of the maple syrup inside each and then stuff the cavities with the fruit-and-nut mixture. Put a small pat of the butter on top of each apple.
  3. Pour the cider and the remaining maple syrup (about 2 tablespoons) into the bottom of the pan.
  4. Bake until the apples are fork tender, 25 to 35 minutes, basting with the cider-and-syrup mixture frequently.
  5. Remove the apples from the pan and pour the juice into a small pot.
  6. Bring the juice to a boil, then simmer until it thickens into syrup. Pour it over the apples.
