  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 cup unsalted butter, softened
  • 1/3 cup sugar
  • 1 large egg
  • 1/3 cup milk
  • 4 tablespoons dried strawberries, blueberries, or cherries
  • Rind of 1/2 a lemon or orange, grated
  • 1 cup cream cheese, whipped (optional)
  • 6 fresh blueberries or strawberries (optional)

  1. Preheat oven to 375° F and line or butter a muffin tin.
  2. In a bowl, sift together the flour, baking powder, salt, and nutmeg.
  3. In a separate bowl, beat the butter and sugar together until light and fluffy. Add the egg and mix until well combined.
  4. Mix the dry mixture into the wet mixture, then add the milk and mix again.
  5. Gently fold in the dried fruit and lemon or orange rind.
  6. Divide the batter evenly among the muffin cups and bake for 15 to 20 minutes. Remove and let cool.
  7. If desired, top each of the cooled muffins with a dollop of whipped cream cheese and a fresh berry.
