- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon freshly grated nutmeg
- 1/4 cup unsalted butter, softened
- 1/3 cup sugar
- 1 large egg
- 1/3 cup milk
- 4 tablespoons dried strawberries, blueberries, or cherries
- Rind of 1/2 a lemon or orange, grated
- 1 cup cream cheese, whipped (optional)
- 6 fresh blueberries or strawberries (optional)
- Preheat oven to 375° F and line or butter a muffin tin.
- In a bowl, sift together the flour, baking powder, salt, and nutmeg.
- In a separate bowl, beat the butter and sugar together until light and fluffy. Add the egg and mix until well combined.
- Mix the dry mixture into the wet mixture, then add the milk and mix again.
- Gently fold in the dried fruit and lemon or orange rind.
- Divide the batter evenly among the muffin cups and bake for 15 to 20 minutes. Remove and let cool.
- If desired, top each of the cooled muffins with a dollop of whipped cream cheese and a fresh berry.
