Chicken Fajitas

  • 1 pound boneless, skinless chicken breasts, cut into 1/2-inch strips
  • 1 tablespoon NutriFit Calypso Salt Free Spice Blend
  • 1 teaspoon extra-virgin olive oil
  • 2 cloves garlic, sliced
  • 1/2 red onion, peeled and sliced
  • 1 green bell pepper, cut into 1/4-inch strips
  • 1 yellow bell pepper, cut into 1/4-inch strips
  • 1 red bell pepper, cut into 1/4-inch strips
  • 2/3 cup fresh salsa, medium spicy
Note: For each teaspoon of the NutriFit Calyso Salt Free Spice Blend you may substitute: 1/2 tsp. ground chiles, 1/4 tsp. cumin, 1/8 tsp. black pepper, and 1/8 tsp. garlic powder.
  1. Season the chicken with the spice blend. Cover the chicken with plastic wrap and marinate in the refrigerator for at least 30 minutes.
  2. Heat a medium-sized sauté pan, add the oil, garlic, onion, and bell peppers, and saute over high heat for about 3 minutes.
  3. Add the chicken and cook over high heat for 10 minutes, or until the meat is cooked, stirring constantly. Serve immediately with salsa on the side.
