Peanut Butter Wrap

  • 1/8 cup reduced-fat, all-natural peanut butter
  • 12.3-ounce package extra-firm, reduced-fat tofu
  • 2 pieces lavosh
  • 2 apples, peeled, cored, and thinly sliced

  1. In a food processor, combine the peanut butter and tofu, and process until well mixed.
  2. Spread each piece of lavosh lightly with the peanut butter mixture. Arrange apple slices evenly over the top.
  3. Roll and cut each lavosh roll into 6 even pieces. Serve immediately or wrap in plastic wrap and refrigerate until ready to eat.
