- 1/8 cup reduced-fat, all-natural peanut butter
- 12.3-ounce package extra-firm, reduced-fat tofu
- 2 pieces lavosh
- 2 apples, peeled, cored, and thinly sliced
- In a food processor, combine the peanut butter and tofu, and process until well mixed.
- Spread each piece of lavosh lightly with the peanut butter mixture. Arrange apple slices evenly over the top.
- Roll and cut each lavosh roll into 6 even pieces. Serve immediately or wrap in plastic wrap and refrigerate until ready to eat.
