Sausage, Three Meals

Remove the casings from 1/2 pound of sausages and sauté the meat with onion and garlic, breaking it up with a spoon until the crumbles are brown. Then take a look into your pantry and fridge to see which of these tasty dishes you can easily whip up.

Risotto
If you have Arborio Rice

Dinner #1: Risotto

Add 3/4 cup of the rice to some olive oil in a saucepan over medium-low heat. Stir to coat.

Warm 6 cups of chicken broth in a separate saucepan or the microwave. Add the broth to the rice a ladleful at a time (stirring after each addition) and cook until the risotto tastes creamy but still firm, about 20 minutes.

Add the sausage, a handful of frozen peas, grated Parmesan, salt, and pepper. Cook until heated through.

If desired, toss in some sautéed sliced mushrooms.

 
Stuffed Peppers
If you have Bell Peppers

Dinner #2: Stuffed Peppers

Preheat the oven to 350° F. Cut off the tops of the peppers and seed, rinse, and dry them. Poke holes in the bottom of each with a fork.

In a bowl, combine a beaten egg, some parsley, bread crumbs, marinara sauce, and the sausage.

Spoon the mixture into the peppers and place them in a baking dish, then top with more sauce (and toasted pine nuts and Parmesan, if desired). Bake until the tops are brown, 30 minutes.

If you have Eggs
 

Dinner #3: Omelet

Preheat the oven to 375°F. Mix 6 eggs, 1/2 cup ricotta or Parmesan, a handful of thawed frozen spinach, and the sausage.

Pour the mixture into an ovenproof skillet and sprinkle it with fontina or grated Parmesan. Place the skillet in the oven and bake until the eggs are set, 10 to 12 minutes.

Season with salt and pepper. And if desired, mix in some fresh herbs (basil, parsley, sage, thyme).
