Please-Everyone Pizza
The Strategy: Change toppings every few inches on the same pizza. This faster-than-Domino's version becomes a meal kids and adults can get excited about.
The Rationale: You're giving the kids what they want—pizza!—but you're giving them a wholesome, healthy version (and showing them homemade can be as delicious as takeout).
The Recipe: Shredded Zucchini and Margherita-Style Pizza
Preheat oven to 400°F. Brush some olive oil onto a large baking sheet and sprinkle it with flour. Stretch a 12- to 16-ounce ball of prepared pizza dough (Trader Joe's sells a regular and a whole-wheat ball) into a 15-by-8-inch rectangle. Top part of it with marinara sauce and fresh mozzarella, and part of it with your zucchini topping (sauté 1 chopped small onion and 1 shredded large zucchini in olive oil over medium-low heat until softened, then season with salt and pepper). Bake the pie until the crust has browned and the cheese has melted, about 25 minutes.
