Any Fish You Wish

The Strategy: Personalize individual parchment-paper packets so Dad can have salmon and the kids can have tilapia, sole, or whatever they like best.

The Rationale: Yes, the customizing requires a tiny bit of planning, but it has zero bearing on total prep-and-cook time. (Plus, they're eating fish, for Pete's sake!)

The Recipe: Fish en Papillote
Preheat oven to 400°F. Rip off a large piece of parchment paper for each diner, as shown. In the center of each, place a 3- to 5-ounce piece of fish. Top with your favorite vegetables (leeks, peas, cauliflower); drizzle with olive oil; add a slice of lemon, salt, pepper, and some dots of butter; then fold the paper to enclose. Bake on a baking sheet for about 14 minutes. (Salmon may take a few minutes longer.)
