Lamb Burgers in Pita
with Yogurt Sauce

For the yogurt sauce

  • 2 cups plain nonfat yogurt
  • 1/2 cucumber, peeled, seeded, diced
  • 1 tablespoon minced garlic
  • 2 teaspoons fresh lemon juice
  • Kosher salt
  • Freshly ground black pepper

For the burgers

  • 1 pound ground lamb
  • 2/3 cup breadcrumbs
  • 1/2 medium onion, chopped
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoons dried oregano
  • 4 pita-bread rounds, top 1/4 trimmed from each (tops reserved)
  • 4 lettuce leaves

  1. Preheat broiler.
  2. Mix together the yogurt, cucumber, garlic, and lemon juice in a medium bowl. Season with salt and pepper to taste.
  3. Mix the ground lamb, breadcrumbs, onion, parsley, and oregano in a large bowl. Season generously with salt and pepper. Shape the mixture into four 3/4-inch-thick patties.
  4. Place the lamb patties on the broiler rack and broil until cooked through, about 4 minutes a side.
  5. Open the pita-bread rounds. Place a lettuce leaf, a burger, and a large spoonful of yogurt sauce in each round.
