For the yogurt sauce
- 2 cups plain nonfat yogurt
- 1/2 cucumber, peeled, seeded, diced
- 1 tablespoon minced garlic
- 2 teaspoons fresh lemon juice
- Kosher salt
- Freshly ground black pepper
For the burgers
- 1 pound ground lamb
- 2/3 cup breadcrumbs
- 1/2 medium onion, chopped
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoons dried oregano
- 4 pita-bread rounds, top 1/4 trimmed from each (tops reserved)
- 4 lettuce leaves
- Preheat broiler.
- Mix together the yogurt, cucumber, garlic, and lemon juice in a medium bowl. Season with salt and pepper to taste.
- Mix the ground lamb, breadcrumbs, onion, parsley, and oregano in a large bowl. Season generously with salt and pepper. Shape the mixture into four 3/4-inch-thick patties.
- Place the lamb patties on the broiler rack and broil until cooked through, about 4 minutes a side.
- Open the pita-bread rounds. Place a lettuce leaf, a burger, and a large spoonful of yogurt sauce in each round.
