  • 1 1/4 cup flour
  • 4 teaspoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoons salt
  • 1 1/4 cup milk
  • 2 large eggs
  • 1 stick unsalted butter (melted and cooled)
  • 1/4 teaspoon vanilla (optional)
  1. In a large bowl, mix the flour, sugar, baking powder, and salt.
  2. In a second bowl, whisk together the milk, eggs, melted butter, and vanilla.
  3. Pour the liquid into the dry ingredients and stir until just combined.
  4. Lightly butter the skillet before pouring each pancake.
  5. Flip each one when the tops are speckled with bubbles that pop; cook until both sides are light brown, and serve immediately.
