Ingredients

Serves 4 | 1 hour 10 minutes

  • 2 pounds chopped meat (or turkey)
  • 2 eggs, beaten
  • 3/4 cup ketchup
  • 3/4 to 1 cup bread crumbs (To adjust loaf to the right consistency. Not too dense, not too mushy.)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 5-1/2-ounce can of tomato juice
  • 2 tablespoons ketchup

  1. Preheat the oven to 350° F.
  2. Combine the meat, eggs, 3/4 cup of ketchup, bread crumbs, salt, pepper, garlic powder, and onion powder in a large mixing bowl. Once all the ingredients are well mixed, shape the meat into a loaf.
  3. Whisk together the tomato juice and 2 tablespoons of ketchup.
  4. Place the loaf on a cookie sheet and cover with the tomato-juice mixture. Bake for 1 hour.
