Ingredients
Serves 4 | 1 hour 10 minutes- 2 pounds chopped meat (or turkey)
- 2 eggs, beaten
- 3/4 cup ketchup
- 3/4 to 1 cup bread crumbs (To adjust loaf to the right consistency. Not too dense, not too mushy.)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 5-1/2-ounce can of tomato juice
- 2 tablespoons ketchup
- Preheat the oven to 350° F.
- Combine the meat, eggs, 3/4 cup of ketchup, bread crumbs, salt, pepper, garlic powder, and onion powder in a large mixing bowl. Once all the ingredients are well mixed, shape the meat into a loaf.
- Whisk together the tomato juice and 2 tablespoons of ketchup.
- Place the loaf on a cookie sheet and cover with the tomato-juice mixture. Bake for 1 hour.
