Hands-on time: 20 minutes; Total time: 40 minutes. Recipe can be doubled, tripled, etc. Makes 4 servings
Ingredients
- 1 medium onion, chopped
- 1 clove garlic, chopped
- 2 tablespoons olive oil
- 1 pound ground turkey, preferably dark meat
- salt and pepper to taste
- 2 14-ounce cans tomato sauce
- 3 tablespoons chili powder
- 1 teaspooon cayenne
- 1 ½ teaspoons oregano
- 1 bay leaf
- 1/8 teaspoon cinnamon
- 1 15-ounce can beans (small black or cannelini), drained and rinsed
- In a deep skillet, over medium heat, sautee onion and garlic in olive oil about 5 minutes.
- Brown turkey meat, breaking up with a fork. Add salt and pepper to taste.
- Once meat is browned, add the remaining ingredients except beans. Mix and simmer on low heat about 20 minutes.
- Add beans and cook until beans are heated through.
