Amaretto French toast is the perfect Mother's Day breakfast: simple for Dad and the kids to prepare, but sweet and slightly decadent for Mom to enjoy. This should be served in bed, with a hot cup of coffee and a bowl of fresh berries.
INGREDIENTS
Serves 1 | Total time: 10 minutes
- 1 egg, lightly beaten
- 2 tablespoons amaretto
- 2 tablespoons superfine sugar, plus 2 teaspoons for sprinkling
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 3 slices bread, halved and crusts removed (the thicker the slices the better)
- 1 tablespoon butter
- In a medium-size bowl, whisk together the egg, amaretto, sugar, and vanilla. Then add the milk and whisk to combine.
- Melt the butter in a frying pan over medium heat.
- Dip a piece of the bread into the egg mixture and place it in the hot frying pan. Cook for 2 minutes on each side or until it's golden.
- Repeat with the remaining pieces of bread.
- Sprinkle the French toast lightly with some more sugar.
