Amaretto French toast is the perfect Mother's Day breakfast: simple for Dad and the kids to prepare, but sweet and slightly decadent for Mom to enjoy. This should be served in bed, with a hot cup of coffee and a bowl of fresh berries.

INGREDIENTS

Serves 1 | Total time: 10 minutes

  • 1 egg, lightly beaten
  • 2 tablespoons amaretto
  • 2 tablespoons superfine sugar, plus 2 teaspoons for sprinkling
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 3 slices bread, halved and crusts removed (the thicker the slices the better)
  • 1 tablespoon butter

  1. In a medium-size bowl, whisk together the egg, amaretto, sugar, and vanilla. Then add the milk and whisk to combine.
  2. Melt the butter in a frying pan over medium heat.
  3. Dip a piece of the bread into the egg mixture and place it in the hot frying pan. Cook for 2 minutes on each side or until it's golden.
  4. Repeat with the remaining pieces of bread.
  5. Sprinkle the French toast lightly with some more sugar.

Tip: Print out this recipe and hand it to Dad tonight, so that he has enough time to gather the ingredients.
