Cucumber Yogurt Soup
Serves 4
This soup is a delicious appetizer as is, but for a heartier meal, add some chopped cucumber and poached shrimp. If you prefer a milder flavor, sauté the garlic in a little olive oil before blending.
- 1 clove garlic
- 1 large seedless cucumber
(or 1 1/2 regular cucumbers, seeded) - 8 ounces plain yogurt
(use Greek yogurt for a thicker soup) - 1 to 2 teaspoons sherry vinegar
- 2 tablespoons fresh dill
- Salt and pepper to taste
- Use a garlic press to crush the garlic directly into the blender.
- Add the other ingredients and blend until well combined.
