Pork and Shrimp Kebabs


  • Bamboo skewers
  • 1 pound pork loin
  • 1 red bell pepper
  • 1 zucchini
  • 1 yellow squash
  • 1/2 pound medium-large shrimp (about 20)
  • 1/2 cup barbecue sauce
  • 1/2 cup pineapple juice
  • Salt and pepper

  1. Soak the bamboo skewers in water for at least 30 minutes before threading food onto them. Preheat the grill to medium high.
  2. Cut the pork loin into 1-inch cubes. Season the pork with salt and pepper. Cut the zucchini and squash in half lengthwise and then into 1/2-inch slices. Cut the red bell pepper into 1 1/2-inch pieces. Peel and devein the shrimp.
  3. Mix the pineapple juice and barbecue sauce together in a small bowl.
  4. Thread half of the skewers with pork and vegetables and the other half with shrimp and vegetables, and brush both kinds with the pineapple barbecue sauce.
  5. Grill shrimp skewers 2 to 3 minutes a side, pork skewers 5 to 6 a side. As an alternative, they can be cooked in the broiler.
