Pork and Shrimp Kebabs
- Bamboo skewers
- 1 pound pork loin
- 1 red bell pepper
- 1 zucchini
- 1 yellow squash
- 1/2 pound medium-large shrimp (about 20)
- 1/2 cup barbecue sauce
- 1/2 cup pineapple juice
- Salt and pepper
- Soak the bamboo skewers in water for at least 30 minutes before threading food onto them. Preheat the grill to medium high.
- Cut the pork loin into 1-inch cubes. Season the pork with salt and pepper. Cut the zucchini and squash in half lengthwise and then into 1/2-inch slices. Cut the red bell pepper into 1 1/2-inch pieces. Peel and devein the shrimp.
- Mix the pineapple juice and barbecue sauce together in a small bowl.
- Thread half of the skewers with pork and vegetables and the other half with shrimp and vegetables, and brush both kinds with the pineapple barbecue sauce.
- Grill shrimp skewers 2 to 3 minutes a side, pork skewers 5 to 6 a side. As an alternative, they can be cooked in the broiler.
