Coconut Sweet-Potato Fries


  • 2 large sweet potatoes (about 1 1/2 pounds)
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon salt
  • 1/2 cup shredded unsweetened coconut

  1. Preheat the oven to 400º F.
  2. Peel the potatoes, cut each in half lengthwise, and cut each half into 6 wedges.
  3. In a large bowl, combine the cut potatoes and the oil. Toss until potatoes are evenly coated with oil. Sprinkle them with salt and coconut and toss again.
  4. On a baking sheet, arrange the potatoes in a single layer, topping them with any remaining coconut, and place the sheet on the middle shelf in the oven.
  5. Bake them until the edges are crisp and the potatoes are cooked through, about 30 minutes. If the coconut browns before the potatoes are done, cover the baking sheet loosely with a piece of aluminum foil.
