Maybe it's the sharp little bones, the briny smell, or a devout loyalty to Nemo, but the prospect of a fish supper is too much for some children to bear. For kids intrepid enough to bite, the king of the sea is usually nothing so recognizable as fish but fish sticks—a meal most parents don't exactly relish. We turned to three parent-chefs from across the country for recipes that will make happy fish eaters out of the entire family: Charles Phan of San Francisco's Slanted Door packs a Southeast Asian sweet-salty punch with a halibut-and-rice noodle dish; Jody Adams of Rialto in Cambridge, Massachusetts, puts a continental spin on fresh sole; and Scott Crawford of Atlanta's Food 101 offers a comfort-food standby with a delicious flounder-fillet burger. Most of all, the dishes here offer a treasure trove of protein, vitamins, and minerals—even with kid-size portions. So go fish!
