British Columbia


Foxglove Farm

When you book a cabin at this 120-acre lush organic farm in Canada, be sure to request for your fridge to be stocked with fresh-picked produce. Enjoy swimming in the farm's pond, playing with its chickens, and taking long hikes in the surrounding hills. The farm's Centre for Arts, Ecology & Agriculture runs scheduled summer farm camps for kids ages 7-12.

Nicaragua


Morgan's Rock

Billing itself as a Hacienda and EcoLodge, this eco-conscious luxury hotel offers a private beach, and a variety of nature tours around the property—including the Baby Sea Turtle Tour. An added bonus: 60 percent of the food served at the resort is grown on-site.

This resort, nestled in the mountains of Puerto Rico, invites guests to gather eggs from its chicken coops for their omelets and fresh coffee beans from the local plantations. There is also plenty of beautiful tropical fruit growing on the fertile land, horseback riding, and a pool.
